First, the important stuff: we hope you had a fantastic Fourth. Fireworks, family, food that wasn't ours for once — we hope the long weekend treated you exactly right.

Now, the World Cup. We're... not going to talk about it. We had predictions. We had hope. We had a bracket. We now have feelings, and none of them are good.

So we did what any reasonable restaurant does in a time of grief: we made something delicious and poured something excellent. If your team's still alive, we're thrilled for you (we're not). Let's heal together.

Lamb Loin with Red Wine Demi-Glace, Shallots & Rosemary

Tender lamb loin finished with a rich red wine demi-glace, shallots, and rosemary — the kind of plate that makes you slow down and pay attention. Elegant, savory, and deeply satisfying.

We're pairing it with our new rotating red, the Honoro Vera Garnacha — and this one has a story (below). Trust us: it was made for this dish.

Meet the Wine — Honoro Vera Garnacha

Our new rotating red comes from the Gil family in Calatayud, Spain, made from old-vine Garnacha grown up to ~3,000 feet in the mountains — some of those gnarled old vines are over a century old. It's dry-farmed, no pesticides, and it shows: ripe raspberry and currant, a mineral streak, and a little white-pepper spice on the finish. Rich enough to stand up to lamb, smooth enough to keep pouring.

The fun part: this wine was poured at the 2013 Oscars dinner, and the winery loves to tell the story that Denzel Washington reserves his allotment every single year. A red with a red-carpet pedigree — and it lands on your table this week.
